Preparing Your Own Dry Rub for Your Thanksgiving Turkey

Dry Rubs are a great way to season your turkey. Making your own help reduce all the salt and artificial products that are in packaged rubs.

I like to keep it simple. When I make my turkey, I always start by washing off the bird, patting it dry, and plucking off any excess feathers that are left behind from the company. I always have the bag if I am using it, and the roaster ready.

I start by first perforating the bird. This helps the flavors to get to the meat, not just stay on top of the skin. I always leave the skin on. This helps keep the bird from becoming dry. If you are watching your fat, remove any excess fat from the bird, but leave the skin on until done cooking it. You don't need to stab the bird all the way through, just to break the skin, and you don't need to do this only but maybe three times on each side, towards the top part of the bird.

I then soften some butter or margarine in my hands and massage this into the bird. If you choose, you can make your dry rub and work it into your butter. I don't do this, as it can have too much in one area, and not enough in another. The butter helps keep the bird moist and helps to brown the skin. A brown turkey is very appealing to the eyes.

Making my rub is a matter of taste. A lot of pre-packaged rubs have high amounts of salt in them. Try to stay away from too much salt. I start with a some thyme, poultry seasoning or sage. If you use poultry seasoning, there are a lot of extra spices in it already. Read the package before you add too many seasonings, as you may end up over doing some of it. I also add an amount of pepper. This helps to give the rub some firmer substance to help spread it around. I also use garlic powder, onion powder, celery salt, and Mrs. Dash table blend. To ad a little color and to enhance the flavor, I sprinkle in some paprika. I don't use any set amount, as it depends on how much you want to season your bird, and how big your bird is. For rule of thumb, you will want to start out with maybe 2 tablespoons of thyme, poultry seasoning, or sage. I add about 1/2 teaspoon of pepper, half to 1 teaspoon each of garlic powder and onion powder, 1/2 teaspoon of celery salt, and about 1 teaspoon of Mrs. Dash. The paprika is just for some color, so you can just sprinkle some in.

Blend these together well. Using your fingers, sprinkle the rub on the entire breast, a small amount on the legs, but not on the wings. Then rub it in in circular motions. This will help the seasoning to blend with the butter you have already used on the bird.

There are so many variations on making rubs, but this is my favorite. The seasonings blend with the seasonings in other foods. Sage and poultry seasoning is in the stuffing, as is celery salt. You don't need to put so much spices in your rub that you can not taste the meat. Turkey is a light flavor, so it is best not to over do the seasonings.

If you want, experiment different rubs on chicken. This will give you an idea of what you like and what you don't like and will make it easier come time for Thanksgiving. You don't want to just throw something together and ruin your bird in front of all of your family!
