Preparing a Dry Rub for Thanksgiving Dinner
This south-of-the-border style turkey rub will have your family and guests clamoring for second helpings.
"The rub is what makes the turkey so flavorful", says Juan. "You have to prepare the spices and then rub the bird with them, both inside and out, and then you let it sit for a day in the refrigerator." Carmen points out that the crispy, golden skin comes from spraying the turkey during the last stage of cooking with a generous coating of flavored olive oil.
Carmen and Juan serve the turkey with fluffy mashed potatoes and gravy made from the turkey drippings. Their most popular side dishes to accompany the turkey are fried plantains, sautéed spinach and a compote of baked apples with brown sugar, cinnamon and clove.
Most of the ingredients for this tasty turkey rub are available at any American supermarket. As a matter-of-fact, you probably have everything you need in your pantry. Follow the recipe, but feel free to vary the measurements to suit your family's tastes. For cooking time and temperature, refer to the instructions on the turkey label.
Assemble the following ingredients:
1/2 T Garlic powder
1 t Dried sage
1/2 T Ground, red chili powder
1/2 T Onion powder
1 T Dried lemon peel
1/2 T Celery salt
1 T granulated chicken consomme
1 T dried parsley flakes
1 T freshly ground black pepper
1 T paprika
Thoroughly mix all the ingredients in a bowl and set aside.
Prepare the turkey. If still frozen, let it thaw overnight in the refrigerator. Gently rinse the turkey, inside and out, with cold water. Dry with paper towels. Insert 2 tablespoons of the rub into the cavity. Apply the rest of the rub to the outside surface of the turkey, on all sides. Wrap the bird in plastic wrap and refrigerate for 24 hours. Follow cooking instructions on the label.
Prepare browning glaze with the following ingredients:
1/4 olive oil
1 T garlic powder
1 T onion salt
1 T Worcestershire Sauce
Mix liquid ingredients in a squirt bottle or shallow bowl and baste turkey during the last 30 minutes of cooking, basting every 10 minutes.
It is very important to allow your Thanksgiving turkey to rest for about 30 minutes after cooking and before carving so that the juices have time to be re-absorbed into the meat of the bird. With a sharp knife or electric carving knife, cut the bird into sections and slice the breast into serving portions. Drizzle cooking juices over each portion and serve. Happy Thanksgiving!
