How to Pick a Ribeye Steak
Many factors go into picking out a great piece of meat. One of the best cuts is the Ribeye.
On the cow itself, the rib sits behind the chuck and runs along the top of the cow. The ribeye can be very flavorful and tender. The reason why the ribeye is tender starts from the location on the cow itself. The muscle on the rib is not used as much by the cow thus making the meat tender. A good rule of thumb is that the more a muscle is used the tougher the meat. This does not mean the ribeye will have no fat because it does. The "eye" in the term "ribeye" comes from the solid piece of fat that you are able to see on top or a ribeye steak. The eye may turn some shoppers away but its a minor inconvenience and should not discourage you from buying this tender cut of meat.
Picking a ribeye
The ribeye comes many different ways. You can buy a ribeye with or without a bone or even buy it as a roast. I prefer my ribeye with the bone because it makes the cut that much more tender. If you like to eat beef ribs then you will like the bone on the ribeye, its the same rib. Picking the right piece takes a keen eye and some skill. First you want to choose a cut that came from the middle of the rib. You can tell that is from the center because compared to an end cut the meat looks firmer. An end cut will have a rougher looking texture. Next, you want to to pick a ribeye that has a small eye, you want to get the most consumable amount of meat for your money. The last and most important part is marbling. The higher the grade of beef such as Choice the more marbling the ribeye will have. Marbling looks like little thin white lines that will run throughout the meat. This is not to be confused with a thicker off white line, this is called gristle and is extremely tough.
How to cook a ribeye
The more tender the beef the less cooking time is needed in order to get the most flavor. There are many different ways and techniques to cook a ribeye. The meat is very flavorful and absorbs herbs and spices very well. I tend to keep it simple and use Lawry's garlic salt as well as their seasoning salt on my ribeye's. I add a light coating of BBQ sauce that does not have an over powerful taste which can be a nice addition. Another recipe you might enjoy and that I have tried comes from Food Network.
