Select a good quality meat which is around 20% fats. A good option would be ground chuck. Create patties in a flat manner with even thickness. Reshape the patty with your hands when the center is thicker than the edges.

To make the grilling process easy, make a hole in the center of the patties about an inch or less as you shape them. When they are in a donut-like structure, they will be cooked more evenly.
