Good Ol' Texan BBQ Chicken

BBQ is Texan to the bone. I'm letting you in on a family recipe that might get me in trouble!

BBQ-ing in Texas is as much of a tradition as baseball, birthdays, and graduations. There is just something about secret recipes, slow smokers and the smell that fills the neighborhood that gets a Texan's blood cookin' and we just can't resist it. Forget quarter sized burger patties for a Texan grillin' session. To BBQ in Texas you need real meat. Brisket, sausage, chicken...mmmmmm

Growing up a native Houstonian you wouldn't think this big city girl knows how to work a grill would you? Well, you might be right. All I really know is charcoal, lighter fluid and a match make a grill work. What I have come to find out though is grilling is a science. Where and how you place the coals determines cook time and juiciness. Propane vs charcoal will forever be a debate at tailgate parties, but the end result is always messy fingers and a full belly. I remember when my Mom would cook steaks out on the grill. It felt like forever as we waited for the grill to get hot enough, she would push coals around, open the lid, close the lid...until finally those thick slabs of meat went down and the backyard filled with smoke. Good times.

One of my favorite recipes though is probably the simplest BBQ Chicken recipe you will ever come in contact with, but just the thought of the smell of this dish cooking takes me back to my childhood. Imagine camping riverside on a hot Saturday afternoon in July. The sound of the water rushing over the rocks combined with the sun peeking through the canopy of trees is all I ever needed to put a smile on my face. With the Old Smokey grill set up I start to prepare the night's dinner. My mother used to make this for my sister and myself growing up, and I have taken it and made it my own. Try it out for yourself:

Recipe:

1 Package of chicken drumsticks, thighs, and breasts

2 Green Peppers

1 Large Red Onion

1 Package of Mushrooms

2 Garlic Gloves

Hand full of whole jalapenos

• Slice in half, remove seeds, cut off ends

Bamboo Skewers

Large Ziploc Bags

Olive Oil

Fajita Seasoning (ingredients below - mixed together ahead of time)

1. 1 1/2 teaspoon cumin ground

2. 1/2 teaspoon oregano dried, crushed

3. 1/4 teaspoon salt

4. 1/4 teaspoon crushed red pepper

5. 1/4 teaspoon coarse black pepper

6. 1/8 teaspoon garlic powder

7. 1/8 teaspoon onion powder

Homemade BBQ Sauce (ingredients below - mixed together ahead of time)

1. 1 bottle of favorite BBQ sauce

2. ¼ cup of honey

3. ¼ cup of horseradish sauce

4. 1 teaspoon garlic salt

Prep the grill before you start working with your food. Make sure your grate is clean - it is not OK for your grate to be dirty! If you are using charcoal, forget my earlier statement and do not use lighter fluid. It WILL affect the taste. A piece of paper and match is all you really need. Wood chips light more easily if you prefer to use that method. If you are using a gas grill please make sure you follow all instructions properly before starting it up.

Take all your chicken pieces and place in large Ziploc bags. Pour in the BBQ sauce, just enough to coat all the pieces. Place the bags in the fridge overnight to marinate. If you don't have time to wait over night, brushing the chicken pieces with the sauce will work just fine.

Next, take the bags and pour in as much fajita seasoning as you like. Close up the bags and shake. After shaking remove the chicken, lay them on a flat surface like a cutting board or plate and rub remaining seasoning into the skin of the chicken. Yes with your hands! BBQ is all about working with your food, do not be afraid to get dirty, just wash your hands first!

If you are using coals, to check if your grill is hot enough they should be a white-ashy color and some will be glowing. Separate the coals into two piles (with a poker) next to each other. If you are using a gas grill, turn off the middle burner and lower the side burners to medium heat. If you want to speed up cleanup later, place a pan between the coals or flames beneath the grate to catch fat drippings and help prevent flames from burning your food.

Next, place all the pieces onto the center of the grate. Close the lid, open all the vents and then walk away! If you have BBQ sauce left over, wait until the last 10-15 to apply to the meat. Otherwise it will only burn and leave your chicken charred. The size of the pieces will vary and if you grill enough you can learn to predict how long it'll take the chicken to cook. For first timers, turn each piece after about 30 minutes. About 30 minutes later check the chicken with a thermometer to check the temperature. Insert the thermometer at the thicket part of the chicken without touching any bone. You are looking for a 165 F reading to tell you your chicken is ready. If you are cooking breasts let them sit for 10 minutes outside of the grill to allow the juices to stay in the meat.

While the chicken is cooking take all of your veggies and cut them to whatever size you desire. Place them on the skewers however you like. I enjoy mine with lots of garlic! Spray or baste with olive oil and then sprinkle with any leftover fajita seasoning. After about the first 30 minutes of chicken cooking time take your skewers of veggies and place them on the grill and allow them to cook. Again, you can baste the chicken with BBQ but only during the last 10-15 minutes of cooking.

(This dish is best served with some dirty rice and sausage as well, if you are serving a large crowd)

Depending on grills, coals, gas or chips and size of chicken pieces all times and methods may vary. Find what works for you. Grilling is personal sometimes, and almost always comes down to a gut feeling at the right moment. If you know what I'm talking about then I don't sound crazy! Have fun, experiment with flavors and sauces and make sure you always enjoy the experience with those you love most. Or at least those you have the most fun with. Enjoy!
