Here is a vegetarian Labor Day recipe for marinated roasted veggies.
Marinated Roasted/Grilled Vegetables
-Large Whole, fresh Portobello Mushrooms - washed and stem end pared
-Large White whole fresh Mushrooms - washed and stem ends pared
-Green, Red, Yellow and/or Orange Bell Peppers, fresh - washed, top cut off, fins removed and cut into halves. pop out top and use 'ring' whole
-Onions peeled and cut into 1/4s
-Summer Squash - washed and cut in half long ways
-Asparagus spears, bottom ends pared off - washed
-One large bottle of (Kraft) Seven Seas Viva Italian Salad Dressing
Use any or all of the vegetables above to your taste. Grill vegetables until still firm, but 'obviously' grilled. After grilled, allow Vegetables to cool a bit, to handle safely. Cut Vegetables into large chunks, leave asparagus whole. Slice portobello mushrooms into large slices (so they look like 'mushrooms'). Cut or slice the white mushrooms in halves or thirds. Cut squash halves into thick slices, about one half inch thick. Slice peppers into strips about one inch wide, and then cut into chunks, cut 'rings' from tops into chunks, cut onion quarters in half. Place all vegetables into a large plastic storage container (such as Rubber Maid or Tupperware) with a tight lid. Pour dressing over cut vegetables and put lid on tightly and shake. Marinade in the refrigerator for approximately 2-3 hours. If desired can be used immediately, but the longer the vegetables are in the dressing the more the vegetables soak in the flavor of the marinade. (For events that are going to entertain both vegetarian and meat eating guests, be sure to cook vegetables prior to the meat, because meat will taint the vegetables. In addition, this is great to eat with steak, chicken or other meats grilled for other guests.)
