Fish Curry (Fried Catfish Steaks Simmered in Tangy and Spicy Tomato-onion Sauce)
The buttery texture of Catfish absorbs the unique flavor of the tomato-onion sauce. The aromatic spices from the Indian sub-continent enhances the flavor and enriches the taste of this simple yet mouth-watering fish recipe.
When you walk into a supermarket fresh fish/seafood section, you normally get attracted towards the catfish steaks or the fillets that are neatly piled up in glass enclosures. Those get sold pretty fast too mainly because of the convenience factor. But so far as traditional fish curry is concerned, make sure you buy the whole fish. The whole fish is sold headless, skinless and is cleaned thoroughly. All you have to do is to slice it up into 3-4 pieces. This is also because you need to include the tail piece in the curry because the bone in the tail piece adds to the taste of the curry.
Preparation time: 30 minutes. Serves 4
Ingredients:
1 small whole Catfish, sliced in 3-4 pieces (found in all supermarkets' fresh fish/meat/seafood section)
2 tsp. turmeric powder
Salt for the fish and curry (according to taste)
1 large Roma tomato-diced
2 tbsp. Red onion paste
1 tsp. minced garlic
1 tsp. ginger paste OR ginger powder
1 tsp. red chili powder
1 tsp. coriander powder
1 tsp. sugar
1 cup hot water
¼ cup normal water
1 tsp. Garam Masala powder
¼ cup finely chopped cilantro.
Oil for cooking
Preparation:
Slice the fish into 3-4 pieces (can make it 4-5 also, depending on the size of the fish)
Rub 1 tsp. of turmeric powder and salt on the fish and keep it aside for 10-15 minutes.
Heat oil in a wok.
Pat dry the fish pieces with a paper towel and fry those in the hot oil till both sides turn light brown in color.
Transfer the pieces on an absorbent paper towel so that the excess oil gets soaked up.
In a cup, mix ginger paste/powder, chili powder, 1 tsp. turmeric, coriander powder, sugar and salt with ¼ cup normal water and make a paste.
Heat oil in a wok and add the minced garlic.
When the garlic sizzles, add the red onion paste and mix well with the oil and garlic for about 2 minutes in medium heat.
When the oil just starts to separate, add the tomatoes and cook well till it turns soft.
Add the spice paste, mix well and cook till the oil separates completely.
Add the hot water, mix well, cover and cook for about 10 minutes till the curry/sauce starts to dry up.
Add the fried fish pieces, mix well with the sauce (be careful not to break the pieces)
Cover and cook till the fish pieces absorb most of the sauce.
Turn off the heat. Sprinkle the Garam Masala powder on the curry and garnish with cilantro.
