Low Carb Thanksgiving Dishes
Here are five tasty low carb recipes to help you stick to your diet this holiday season.
Low Carb Turkey Stuffing
1 cup chopped onions
1 cup chopped celery
1 head of chopped broccoli
1 cup chopped mushrooms
4 cups of cooked Couscous
A handful of chopped fresh Sage, Rosemary, Thyme
Salt and pepper to taste
Sauté the onions, broccoli, celery and mushrooms in 1 tablespoon of olive oil. Add herbs, salt and pepper, then remove from heat. Gently combine with cooked couscous. Stuff inside turkey and bake for 20 minutes.
Low Carb Swedish Meatballs
Preheat oven to 350 degrees F
1 lb. of ground beef
1/2 cup of chopped onions
6 skinless spicy Italian sausages
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon nutmeg
1 cup of chicken stock or broth
Mix all ingredients in a large bowl. Roll into balls. Place on a baking sheet and bake meatballs until brown for 15 minutes. Place the chicken stock in a pot and bring it to a simmer. Add the meatballs to the chicken stock and continue to simmer for 10 minutes so they absorb the chicken stock flavor. Serve warm.
Green Bean Casserole
Preheat oven to 350 degrees F
1 pound of green beans
1/3 cup of chopped onions
1 teaspoons of fat free margarine
1 cup of dry bread crumbs
3 tablespoons of powdered garlic
1 can of cream of mushroom soup
Fresh ground pepper
Steam the green beans for 10 minutes or until crisp. Make sure to not overcook them! Sauté the onion in margarine until onions are browned and caramelized. Sprinkle the garlic over the onions and add in the bread crumbs. Set this mixture aside. Place the steamed green beans into a casserole dish. Pour the can of soup over them and then top with the onion and crumb mixture. Bake for 25 to 30 minutes or until the crumbs are brown.
Festive Pumpkin Pudding
8 oz package of cream cheese
1 teaspoon vanilla
1 small can of pumpkin filling
1 teaspoon cinnamon
Cloves to garnish
12 packets of Stevia sweetener
1 cup of milk
Combine milk, cream cheese and pumpkin filling in a large bowl. Use an electric mixer and beat on high for 3 minutes . Add vanilla, cinnamon and sweetener. Beat for another 2 minutes on high. Refrigerate for 3 hours until firm before serving. This creates 10 servings.
Warm Spiced Apple Treat
Preheat over to 250 degrees F
4 chopped apples
1 tablespoon of Stevia or another sugar substitute
1/2 teaspoon of cinnamon
1/2 cup of wheat germ
2 cups of chopped walnuts or pecans
3 tablespoons of caramel topping
Place apples in a cake pan. Sprinkle the cinnamon and Stevia evenly over the apples. Add walnuts or pecans over the mix. Cover with a sheet of foil. Bake in the oven for 10 minutes. Remove cover and sprinkle the wheat germ over the top. Lightly drizzle with the caramel topping. Serve warm.
