Planning a backyard barbecue in the near future? You may want to consider adding grilled fruit to the menu. There are many ways to grill fruit but the two most common methods are putting fruit slices straight onto the grill or placing the fruit onto bamboo skewers that have been soaked in water or fruit juice. Personally, I like to use raw sugar cane sticks instead of bamboo skewers. You can also use all sorts of fruit in the process. Here are some of the best ones:
1. Plantains
Some folks like to grill yellow bananas, but I prefer to grill plantains. Plantains tend to be firmer than yellow bananas and as such, hold up really well on the grill. One of my favorite ways to grill plantains (amarillos) is with a glaze that is made from a high quality, Caribbean rum and pure cane sugar. You can purchase the pure cane sugar in all kinds of kicked up flavors like vanilla, toasted marshmallow and coconut. To make the glaze, combine and heat the sugar, rum, unsalted butter and sea salt into a saucepan. Then brush it over the plantains as they grill. I'd also suggest pouring the glaze and plantains over angel food cake or vanilla ice cream for an extra sweet treat.
2. Cuban Cane Sticks
Cuban cane sticks are actually made up of a variety of fruits found in Cuba. I like to cut the fruits up and place them onto a raw sugar cane stick instead of a bamboo skewer. It adds an extra sweetness to the fruit. You can typically buy a box of the raw sugar cane sticks online for $7. The fruits that I'll put on our Cuban cane sticks are pineapples, grapefruit, plantains and guavas. Sometimes I'll also add other fruits like mangos, papaya and strawberries. I'd suggest serving them with a grilled coconut, ginger and caramel sauce.
3. Nectarines
Nectarines work really well on the grill and you can pair them with a lot of different sweet and savory things. I'd recommend cutting the nectarines in half, removing the pit and placing the halves directly onto the barbecue grill. I also like using a honey glaze or stuffing the insides of the nectarines with a soft cheese like brie, blue or feta.
4. Plums
I love plums whether they have been grilled or not. I'd suggest grilling the plums in the same manner as the nectarines, only I'd change the glaze to one made from either a mead or a dessert wine with a touch of cinnamon. Two of my favorite wines to use for such purposes come from Brotherhood Winery in Washingtonville, New York. I'd highly recommend the Holiday Spiced Wine ($12) and the Ghengis Khan ($11). Based on my experience, both have fruit and spice undertones that enhance the plum's natural flavor.
5. Peaches
Grilled peaches are another superlative choice if you ask me. I like cutting the peaches in half and stuffing them with a mascarpone cheese. They also pair well with a variety of glazes or a dollop of sour cream. I'd suggest serving them with ice cream, yogurt or a sorbet as well.
