This meal will entice your family so much they will never think you are serving leftovers. One bite into this tangy meaty sandwich and your family will be begging for more! Paired with the creamy sweet flavors of sweet potato, sliced for convenient eating, it's a match made in heaven!
Supplies:
Sharp knife.
Medium sized bowl.
Large spoon.
Toaster(optional), or skillet.
Ingredients:
1 leftover grilled pork chop for each person you are serving.
1-2 bottles of your favorite BBQ sauce.
Enough slices of bread allowing 2 slices per sandwich. White or whole wheat, it's your choice.
1 grilled sweet potato per person.
Butter(optional if using a skillet to brown the toast).
Directions:
Place the sweet potatoes in the oven to warm.
With a sharp knife, slice the pork chops into bite sized pieces.
Place the pieces in a bowl. Add enough BBQ sauce to thoroughly coat each piece. Be generous with the BBQ sauce. It can take whole bottles of this stuff.
Toast your bread in a toaster or for more flavor, grill on the stove in a skillet. I like to use a big cast iron skillet.
Place butter on each piece of bread to be toasted, and butter side down, toast until lightly browned. This step is optional. The sandwiches are just as yummy without being toasted.
Load your bread with the BBQ pork.
Slice the heated sweet potatoes into ½-1 inch rounds and fan out on each plate.
