How to Smoke Ribs on Your Weber Grill
A step by step guide on how to smoke st louis style ribs on your weber grill.
1) Gather your materials:
- Weber grill or the equivalent
- Foil pan
- Slab of St Louis Style Ribs
Start by throwing some hickory woodchips into a small bowl with water. Then you can also fill your foil pan with warm water at the same time. Set these aside about an hour before the ribs actually hit the grill. Also fire up a chimney of charcoal and throw it into your weber. Make sure to have all air ports (bottom and top) in the OPEN position for proper airflow and make sure you have your grill thermometer handy to stick in one of the top air ports to monitor tempature. Let the grill come up to proper tempature (275 degrees) while you prep your ribs.
- Rib preparation:
Turn the ribs over on the back side and grab a paper towel. Its a little tricky but start at the corner with the paper towel and try to work off the back membrane (white) of the slab. Once you have that done, then comes the dry rub and/or mustard. I like to use mustard because it brings out the flavor of most meats and gives the rub something to stick to. Apply one or both liberally.
2) Start cooking:
By now your grill should be up to the proper tempature. If not, wait a little longer. Place your foil pan full of water directly ABOVE the coals on one side of the grill. This should leave you with 1 side to place your ribs. Place them down and let it sit for 30 minutes.
3) While cooking:
After your 30 minutes, as the tempature starts to drop a little, its time to add a couple of warm coals you have sitting in your charcoal chimney. Add in some woodchips while you're at it. This will start the actual smoking progress. Through your 4 hour long cooking process, you can add your favorite bbq sauce to the ribs. Alot of people wait till towards the end, but if you start about midway through, your sauce will harden into a nice crust if you so desire. Some people also baste with apple juice if you like your ribs a little sweater and then add sauce right at the end of cooking. Theres also the option of not adding any sauce at all and just enjoying the taste of the meat, smoke, and rub itself.
4) Done cooking:
About 4 hours into cooking, or a little longer in most cases, your ribs should be done. You can either use a meat thermometer to check internal tempature or if you pick them up off of the grill with some tongs and see that the meat is very flimsy, or a bone becomes exposed, they are definitely done. Add your favorite bbq sauce and enjoy!
