Marzetti Buffalo Ranch Veggie Burgers
A creamy, spicy veggie burger is just right for summertime.
Summertime is synonymous with grillin' time. For three months out of the year, our family grills out four times each week. The whole family can spend the evening outdoors, playing the yard, while mom or dad fires up the grill to make memories (and food!). These nights are wonderful ways to experiment with delectable burgers, grilled vegetables, and even pizza.
This weekend, a novel idea came to mind after seeing numerous advertisements at a popular sandwich shop for the Buffalo Chicken Sandwich. Well, chicken isn't a very popular protein around here, but veggie burgers sure are. What better way to put smiles on faces than creating the Buffalo Ranch Veggie Burger! To do so, I had the help of Marzetti Simply Dressed Ranch, a creamy, healthy ranch dressing that makes my family smile. This ranch dressing is everything that a whole foods family could ask for- there are no preservatives, no ingredients that I do not understand, and it packs over 400mg of Omega-3 ALAs....better known as the good for you fat.
Ranch wasn't the only magical ingredient in this grilling phenom. The veggie burger was topped with Balsamic Grilled Onions, Buffalo sauce, and avocado, which, when put together, makes a firework show go off in your mouth. Follow this recipe to make your family a healthy, grilled meal that is great for summertime.

1 Sweet Yellow Onion, sliced in to thin rings
Directions:
For the Veggie Burgers
1. Get the grill going. If you are using charcoals, let stand fifteen to twenty minutes before adding the burgers.
2. In a food processor, combine garlic and the red onion. Process well.
3. Add the almonds, sunflower seeds, cilantro, chili powder, olive oil, salt, pepper, and the ranch dressing. Pulse until the mixture is coarsely chopped and well combined.
4. In a medium bowl, smash the beans. Add the pulsed ingredients. Stir in the bread crumbs. Mix together with your hands, just like you'd do with meat. Season to taste.
5. Form in to patties. Grill them, 7 minutes per side.
For the Balsamic Grilled Onions:
1. Marinate the yellow onion in the Balsamic for 45 minutes.
2. In a foil "boat", add the onions to the grill when you put the burgers on. Stir constantly. They are done when the burgers are done.
For the Assembly:
1. Spread ranch dressing on the top and bottom halves of the toasted buns.
2. Add a veggie burger to the bun. Squirt some buffalo sauce onto the patty.
3. Top with slices of avocado and grilled onions. Add the top bun and eat.
This recipe will make everybody in the family happy, even those that prefer meat to vegetables. Bon Appetit!
A few suggestions:
*Feel free to use pre-made veggie burgers if you do not have the time to create these delicious veggie burgers.
-This Ranch goes a long way. Use about 2TBSP for each burger.
-Buffalo sauce can be super spicy; again, a little goes a very long way. If you are serving children, 1 tsp will suffice.
