Tips for Barbecuing Baby Back Ribs
Barbecued ribs may be the best food ever invented. Baby back ribs are the most popular to grill. I love to slow smoke ribs, but use the larger spare ribs for slow cooking.
Over charcoal or on a gas grill, the process is the same. Start with high heat, let the ribs brown, then lower the temperature and allow the ribs to cook for about ten minutes, letting the smoke flavors penetrate the meat. When cooking with gas, use some wood chips; or with charcoal, use some wood chunks.
Smoking woods are always a hardwood like hickory or mesquite, often, but for ribs, I like to use fruitwoods, like apple, cherry, or apricot. It seems to add a smoky sweetness that hickory won't add, and mesquite is only good for steaks.
The barbecue sauce is key. There are many barbecue sauces on the market, and most of them are good, according to different tastes. There is a sauce called, "Sweet and Sticky," that is great, but not available everywhere. Never fear, just buy what you like and add some honey or maple syrup to the sauce, it will be great; I promise.
If you want to marinate the ribs before grilling, or add dry rub, go ahead, but I have gotten away from doing that to ribs on a grill. The herbs and spices, especially the sugars will burn and taste bitter. I wait until the ribs are almost done, having browned them and let them cook for at least ten minutes with the lid closed and the air turned down, then add the flavors with the barbecue sauce. Close the lid and give them another few minutes until the barbecue sauce is beginning to caramelize; now you're cooking.
Put some extra barbecue sauce on the table with the ribs, slice up the ribs for your guests and serve with grilled corn-on-the-cob and baked beans, with some green apple/cabbage slaw on the side. MMM, yummmmmmmy.
